Stephan Moninger was born on Christmas day 1827 in Württemberg, Germany. On the 16th December 1856, he was granted a license to brew commercially and founded the Brauerei Moninger in Karlsruhe, Germany. It was the same brewery he had previously worked at as brewmaster, then known as the Brauerei Ludwig Kaufmann. When his boss died in 1852, he married his widow, Marie Kaufmann, and Moniger assumed control of the brewery then but had to wait until two years later to be inspected and permitted to join the local brewers and coopers guilds.
In May 2010 the Moninger brewery bought the Hofbrauhaus Hatz in Rastatt.

Over the years the brand identity is updated and re-launched with subtle changes, a change of Logo or a new font.
Sometimes this brand update is done by the new owners after a brewery has been sold, other times just to give the brand a fresh new look on the ever growing market.
